Easy Peasy, A Bit of Lemon Squeeze | Fresh Blackcurrant Cordial

Cordial from four ingredients

Got some soft fruits left from your harvest? Eaten loads already and just want an alternative to jam for the leftovers? Here is how I made some easy and speedy cordial with leftover blackcurrants.

I have adapted the recipe to fit with 100g of soft fruit.

INGREDIENTS

You will need:

  • 100g soft fruit (I used blackcurrants)
  • 75g caster sugar
  • Juice and zest of half a lemon (more if you like a little zing)
  • 100ml of water

METHOD

Simmer to your ideal consistency

Pour water into a saucepan and place on a medium heat, chuck in the sugar. Dissolve the sugar and bring the syrup to the boil. Once it is boiling throw in the lemon juice and zest, and bring to a simmer. Drop in the fruit and heat until the fruit softens and starts to burst. The longer you heat for the thicker and more syrupy your cordial will be.

 

Once you are happy with the softness of your fruit, place the mixture through a sieve lined with  a muslin cloth and pour into a heat proof jug. Once cooled decant into a sterilised bottle.

Dilute the cordial with water to your liking.

Strain your fruity mix
